Vegan Meatloaf and Mash

Broccoli was invented by crossing cauliflower seeds with pea seeds. Broccoli is a giant bundle of unopened flowers. A cup of broccoli has more vitamin C than an orange. It is also a rich source of vitamin K and dietary fiber.

    : Prepare the Ingredients
    Wrap the vegan Meatloaf in aluminum foil. Make sure it's well sealed.

    Wash and dry the vegetables prior to chopping (as required):
    - Potato: peel and cut into cubes
    - Green French Beans: trim off the woody stalk
    : Mashed Potato and Green Beans
    IN A POT: Put the potatoes in a pot add just enough water to cover them, add salt and bring to a boil. Boil the potatoes until they are soft enough to mash. Take them out of the water and set them aside. Now steam the green beans in the same water until they are tender enough for you.

    IN A MICROWAVE: Steam the potatoes in a covered microwave dish for about 10 to 15 minutes on full power (time). The beans will take 1 to 1m30s to get tender.

    Let the potatoes cool slightly before mashing them, add the coconut milk, nutmeg, a pinch of salt and pepper. Your mashed potatoes are ready.
    : Make the Meatloaf, Plate and Serve
    Place the meatloaf wrapped in the foil in a pan and add enough water so that it half covers the meatloaf. Cover the pan with a lid. Turn the heat to high, bring the water to a boil and then lower the heat and allow it to simmer. Steam the meatloaf for about 20 minutes. Then carefully take it out of the pan. Remove the foil casing.

    Completely drain the water from the pan and dry the pan. Heat the pan on a medium high heat. Add some cooking oil. Then carefully place the steamed meatloaf on the pan. You just need to sear it on both sides before serving.

    Warm up the vegan brown gravy.

    Plate and Serve:
    Plate the meatloaf, pour the brown gravy on it. Serve it with the potato mash and the beans on the side.
