    Prepare the Ingredients
    Wash and dry the vegetables before chopping.
    Sweet Potato: peel and cut in cubes
    Shallots: peel and roughly dice them
    Garlic: peel and mince
    Red Chili: dice
    Green Lime: scrape off the zest, cut it in half and juice
    Flat leaf Parsley: chop it
    Cherry Tomato: cut in half.
    Boil Sweet Potato and Green Lentils
    Take some cold water in a pan / pot. Add salt and sweet potato and bring it to boil. Boil for about 8 to 10 minutes or till they are done. Drain away the excess water.

    In another pan / pot, take some cold salted water. Add lentils and bring it to boil. Keep boiling for about 10 minutes or till lentils are done. Drain away the excess water.
    Prepare the Salad and Serve
    Dressing: Mix shallots and garlic with the lime juice, lime zest and salt. Let it sit for at least 10 minutes to "cook" the shallots. Add the parsley, red chilli, a pinch of pepper, extra virgin olive oil and mix well.
    In a mixing bowl combine; cooled sweet potato, green lentils, cherry tomatoes and dressing. Mix well. Check the seasoning.

    Plate and serve.
