Sweet Chili Stir Fry Tofu and Vegetables with Rice Noodles

Tofu is made from soybean curds. It is naturally gluten-free and low in calories. It contains no cholesterol and is an excellent source of iron and calcium.

    Prepare Your Ingredients
    Rice Noodles : Bring some water to a boil (roughly 1 litre per 100g of noodles). Add in the rice noodles
    and stir. Keep stiring and cooking them for about 2-3 minutes or until they are tender. Drain out the water
    and wash the noodles to prevent them from sticking together.

    Cut the following into small cubes : Baby Corn, Broccoli, Carrots
    Cucumber, Onion and the Tofu.

    Spring onions : cut them into long strips or juliennes.
    Parboil your vegetables.
    In about 2-3 litres of boiling water salted, parboil (partially boil) your vegetables with the exception of the cucumber,
    onion and spring onions. You may omit this step if you are short of time.
    Stir Fry Tofu
    Heat some oil in a pan or wok. Start by lightly frying the tofu cubes. Once they have a little colour on them
    star adding the other vegetables to stir fry. A suggested order is :

    Baby corn

    Then add the sauces provided. Toss in the noodles and then mix the lot. Turn off the heat
    before adding the cucumher and garnishing with the spring onions.

    Your stir fry tofu and noodles are ready.
