Sweet Chili Stir Fry Tofu and Vegetables with Rice Noodles

Tofu is made from soybean curds. It is naturally gluten-free and low in calories. It contains no cholesterol and is an excellent source of iron and calcium.

    : Prepare the Ingredients
    - Tofu: cut in small cubes.
    Wash and dry the vegetables prior to chopping (as required):
    - Baby Corn: cut into cubes
    - Broccoli: cut into small cubes
    - Carrots: peel and cut into small cubes
    - Cucumber: cut into small cubes
    - Red Onion: peel and dice
    - Spring Onions: cut into long strips or juliennes.
    : Boil the Noodles and Vegetables
    Noodles: Bring some water to a boil (roughly 1 litre per 100g of noodles) in a pot. Add in the rice noodles and stir. Keep stirring and cooking them for about 2-3 minutes or until they are tender. Drain out the water and wash the noodles to prevent them from sticking together.

    Vegetables: Start with boiling about 2-3 litres of water, salt it, parboil (partially boil) baby corn, broccoli, carrots. You may omit this step if you are short of time.
    : Prepare the Stir Fry, Plate and Serve
    Heat some oil in a pan or wok. Start by lightly frying the tofu cubes. Once they have a little colour on them, start adding the other vegetables to stir fry for 1-2 minute each, in the following order:
    - Red Onions
    - Baby corn
    - Broccoli
    - Carrot
    - Edamame Beans
    Then add the sauces (sweet chili sauce, vegetarian oyster sauce, chili jam) provided. Mix well. Check and adjust the seasoning. Toss in the noodles and then mix the lot. Turn off the heat before adding the cucumber, sesame oil.

    Plate and Serve:
    Plate the stir fry and garnishing with the spring onions and serve.
