Keto Salmon and Cauli Mash

Salmon flesh varies from red to orange and occasionally white. It is is very high in selenium, vitamins B6 and B12, niacin and protein and it has significant quantities of many other vitamins and minerals, and is also well known for its omega-3 fatty acids.

    : Prepare the Ingredients
    Get the SALMON out of the fridge 15 minutes before cooking. Season it with the spice powder, salt and pepper.

    - Cauliflower: cut into florets and wash well.
    : Boil and Mash the Cauliflower
    IN THE MICROWAVE : Cut the CAULIFLOWER into florets. Put the florets in a microwave proof dish, cover loosely. Cook them for about 3-4 minutes on full power. Check if the cauliflower is easy to mash, otherwise put back in for a one minute burst on full power. Repeat as required.

    IN A POT : If you want to boil the cauliflower, put the cauliflower florets in a pot. Cover them half fill the pot with water. Put the pot on a medium heat. Cover the pot and cook until the cauliflower is soft enough to mash. Drain out any excess water well.

    In a bowl, mash the the cauliflower with a potato masher. Add half of the herb butter, salt and pepper. Mix well.
    : Pan Fry the Salmon, Plate and Serve
    Heat a pan on a medium heat. Once hot, add a tablespoon of oil. Let the oil coat the pan. Carefully place the salmon skin side down on the pan. Let the salmon cook until it is roughly 80% done. You can tell by looking at the sides of the fillet. Once it is 80% done, flip the fillets over and let them conitnue cooking.

    Turn off the heat and let the salmon rest for 5 minutes before serving.

    Plate and Serve:
    Serve the cauli mash with the salmon and the rest of the butter on top of the salmon fillet.
