Low Carb Chicken Marsala

Chicken Marsala is a popular Italian-American dish, typically made from Chicken and Marsala wine. The dish originates to 19th century Sicily where it was most likely created by English families living in western Sicily, where Marsala wine is produced. However our version is alcohol free.

    : Prepare the Ingredients
    Chicken: Keep it out of the fridge for 15 minutes to bring it room temperature.

    Wash and dry the vegetables prior to chopping (as required):
    - Green French Beans: remove the woody stalks off the ends of the beans
    - Button Mushrooms: slice
    - Garlic: peel and mince
    - Cherry Tomatoes - cut in half
    - Flat Leaf Parsley: chop
    - Thyme: chop.
    : Cook, Plate and Serve
    Sauté the Green Beans:
    Heat a pan. Add some oil and sauté the beans, season them.
    Once they’re done keep them aside.

    Braise the Chicken:
    Add some more oil to the same pan. Add garlic and sauté (don't let it burn).
    Lightly season the chicken with salt and pepper. Place it in the pan and braise till it gets a nice colour on both the sides.
    Then add the mushrooms, cherry tomatoes and thyme to the pan. Cook for 2-3 minutes.
    Pour the brown gravy over the chicken. Lower the heat and let it cook at low temperature for about 15 minute or until the chicken is cooked.
    Check and adjust the seasoning.

    Plate and Serve:
    Plate the chicken, garnish with parsley and serve with the green beans on the side.
