Low Carb Sausage and Peppers

The word sausage is derived from the Latin word ‘salsus’ which means something salted. A sausage consists of meat, cut into pieces or ground, and filled into a casing (traditionally made from intestine), with other ingredients. Sausages are primarily a summertime favorite and staple of many a backyard barbecues.

    Pantry: Salt | Pepper | Your preferred cooking oil |
    : Prepare the Ingredients
    Wash and dry the vegetables prior to chopping (as required):
    - Bell Peppers: cut them into long strips of medium size
    - Garlic: peel and dice finely
    - Fresh Oregano, Fresh Thyme, Fresh Parsley: chop.
    : Cook, Plate and Serve
    Heat a skillet or a thick bottom pan, add 1 tbsp cooking oil, fry the sausage and keep them aside.

    In the same pan, add garlic and sautee. Do this on a gentle heat, you don't want to burn the garlic. Add bell pepper and continue cooking till soft. Now add peeled tomatoes, fresh oregano and thyme. Return the sausages, cover and let this simmer for 15-20 minutes or until the sausages are cooked.
    Keep stirring occasionally. Check the seasoning.

    Plate and Serve:
    Plate the Sausages, garnish with chopped parsley and chili flakes and serve.
