: Prepare the Ingredients
Skirt Steak: Keep it out of the fridge for 15 mintues to bring it to room temperature. Pat dry to remove moisture.
Wash and dry the vegetables prior to chopping (as required):
- Rocket Leaves: just wash and dry
- Cucumber: cut in cubes
- Cherry Tomatoes: cut in halves
- Red Radish: cut into slices.

: Boil the Quinoa
Soak the Quinoa in water for about 2 minutes then put in a sieve and then rinse it under running cold water to get rid of the excess starch. Rinse for about 30 seconds or until the water runs clear. Bring some water to a boil. For every 100g of Quinoa, you will need 250ml of water.
Once the water starts boiling then add in some salt. DO NOT add salt until the water starts to boil.
Turn the heat to medium. Put the quinoa in and cover the pot. Let it cook for about 15 – 20 minutes.

: Cook the Skirt Steak, Plate and Serve
Season the Steak with salt and pepper just before cooking it.
Heat a pan till it is almost smoking hot (Caution: dont overheat the pan). Add a touch of oil just enough to grease the pan.
Place the steak on the pan and cook for about 10 seconds, flip over and cook the other side, again for about 10 seconds.
Let is rest for about 5 minutes.
Salad:
In a mixing bowl combine ; quinoa, cut vegetables and lemon dressing provided. Mix well. Check and adjust the seasoning.
Plate and Serve:
Plate the Steak with salad on the side and Serve.
