    Mise en Place
    Preheat your oven to 180°C

    Prepare the vegetables as follows:

    Green Zucchini: Split in half and scoop out the inside
    Tomato: Chop into small cubes
    Green Bell Pepper: dice into small cubes
    Parsley: Chop
    Onion: dice fine
    Garlic: mince.
    Sauté Vegetables
    Heat some oil in a pan, once it gets hot enough lightly sauté the onions and garlic. Once the garlic and onions are slightly translucent then add all the bell peppers. Sauté for 2 minutes and then turn off the heat.
    Stuff the Zucchini
    Mix the vegetables and the ground turkey. Lightly season the Zucchini before stuffing it with the turkey and bell pepper mixture. Top with the chopped tomatoes and then bake in the oven for about 15 minutes or until the meat is cooked.
    Sauté the Green Peas
    Heat some oil in a pan, once it gets hot enough lightly sauté the green peas.
    Make the Green Pea Purée
    Once the green peas have been sautéed lightly, put them in blender with 2 tablespoons of water and some seasoning. Then blend the peas into a purée. Once the purée and Zucchini are done, you are ready to serve.

    Warm Italian style tomato sauce provided , sprinkle the chopped parsley on top of the Stuffed Zucchini before serving.
