    Your Pantry Essentials
    A sauce pan
    Your preferred cooking oil
    Salt and Pepper.
    Prepare your Ingredients
    Keep the meat out of the fridge 15 mins before cooking.
    Preheat the oven to 180°C

    Green Zucchini: wash, split in half and scoop out the inside
    Tomato: wash and chop into small cubes
    Green Bell Pepper: wash and dice into small cubes
    Parsley: wash, dry and chop
    Onion: peel and dice finely
    Garlic: peel and mince.
    Prepare the Stuffing and Stuff the Zucchini
    Heat some oil in a pan, once it gets hot enough, add onions and garlic. Lightly sauté till they are slightly translucent then add all the bell peppers. Sauté for 2 minutes and then turn off the heat. Mix the vegetables and the ground turkey. Check seasoning.
    Lightly season the Zucchini before stuffing it with the turkey and bell pepper mixture. Top with the chopped tomatoes and then bake in the oven for about 15 minutes or until the meat is cooked.
    Prepare the Green Peas Purée and Serve
    Heat some oil in a pan, once it gets hot enough lightly sauté the green peas. Once done, put the green peas in a blender with 2 tablespoons of water and some seasoning and blend into a purée.

    Sprinkle the chopped parsley on top of the Stuffed Zucchini and serve with the warmed up the Tomato and Herb sauce provided.
