    Mise en Place
    Prawns: keep out of the fridge at least 15 minutes before cooking.

    Prepare the vegetables as follows:

    Hass Avocado: Split in half, scoop out flesh and chop into dices.
    Mango: Just like the avocado, split in half, scoop out flesh and chop into dices
    Red Onion: peel and dice
    Red Chili: split in half, discard the seed and then dice fine
    Coriander: chop.
    Prepare Mango Salsa
    In a mixing bowl combine: Mango, red chili, coriander and onion. Season lightly.
    Prepare Guacamole and Crab meat Salad
    In a mixing bowl combine: Avocado, Crab meat, Red chili, coriander and onion. Season lightly
    Grill the Prawns
    Heat some oil in a pan. Lightly season the prawns. Once the pan is hot enough, start grilling the prawns.
    Compile Salads
    Lightly dress the rocket leaves with extra virgin olive oil, salt and pepper.
    Serve the salsa, guacamole & crab meat and prawns separately or plate as shown in the picture.
