Mise en Place
Potatoes: cut them into large dices, we suggest peeling them if you would like a smooth mash.
Chicken Breast: ensure it sits for at least 15 minutes outside the fridge before you start cooking.
Basil Pesto: make sure it is at room temperature before you use it. Do not heat it in a microwave nor pan.

Prepare the Mashed Potato
Steep the potato dices in milk, salt and pepper all in a sauce pan. Bring the milk to a gentle boil and allow the potato to cook till it is fork tender i.e. you can easily pierce it with a fork. Then take the potato and milk off heat and put it in a blender. Purée until it is smooth.
Alternatively, use a wooden spoon (or whatever is available) and mash the potato by hand.

Finish the mash in a frying pan
Gently cook the purée in a frying pan until you get the consistency you like. Turn off the heat once it is done and mix in the butter while it is still warm.
Pan grill the chicken
Heat some oil in a pan. Season the chicken breast with salt and pepper. Once the oil is warm enough then place the chicken breast skin side down. Let it cook gently on a medium heat for about 5-6 minutes a side.

Plating and Serving
