    Mise en Place
    Prepare the ingredients as follows:

    Tiger Prawns: Get them out of the fridge 15 minutes before you start cooking.
    Garlic: Peel and mince
    Broccoli: Cut into small florets.

    Start the Risotto
    Start by gently sautéing the garlic and risotto rice. Add a little bit of stock to the rice and keep stirring until it completely absorbed.
    Add stock and finish the Risotto
    Once all the stock has been absorbed, add some more stock and stir until the stock has been absorbed by the rice. Repeat the process until the all the stock has been absorbed and the rice is cooked through. Finish the risotto by adding the parmesan, cream cheese, hoisin sauce, butter and chili bean sauce.
    Steam the Broccoli
    Bring some water to a boil, season with salt and the steam the broccoli florets for around 3 minutes then drain out the water and keep the broccoli aside.
    Sear the Tiger Prawns & Finish the Dish
    Heat some oil in a pan. Lightly season the prawns and once the oil is hot enough, start searing them. The prawns should cook within about 3-5 minutes. Take them off the heat, let them rest for 2 minutes before plating as depicted or as you would like.
