Lobster Thermidor

Lobsters typically have a mottled greenish brown colour. They turn red when cooked because the heat breaks down a protein that release a pigment called astaxanthin. This comes from the plants that were eaten by the animals that lobster eventually ate !

    Mise en Place
    Pre heat your oven to 200°C .

    Prepare the ingredients as follows:

    Cheddar and Parmesan: grate them and keep aside
    Asparagus: trim off the woody ends
    Baby Potatoes: cut in half or quarters
    Lobster Tail: Split in half with a sharp knife, scoop out the meat and cut into large cubes. Ensure it is left out of the fridge for 15 minutes or until it reaches room temperature. Keep the shell for presentation if you would like
    Make a bread crumb topping by combining the breadcrumbs, chopped parsley and parmesan.
    Lightly Pan Roast Lobster
    Heat some oil in pan. Make sure the pan is hot. Season the lobster meat well and lightly pan roast the lobster meat. Then add the béchamel provided. Once it is warm, add the cheddar cheese. Cook it on a gentle heat to allow the cheddar to melt.
    Gratinate the Thermidor
    Return the lobster & béchamel mixture to the shell or into small oven proof dishes if you have them. Sprinkle the bread crumb topping on top and lightly drizzle some oil over the crumbs. Bake the thermidor for around 8-10 minutes.

    You could save this step for the last minute just before serving if you wish. In which case, proceed to immediately to step 4.
    Prepare the Potatoes
    Bring some water in a sauce pan or pot to a boil. Then add some salt. Parboil the potatoes until they are relatively soft enough to be pierced with a knife. Take out the potatoes and set them aside. Keep the water boiling for the asparagus.
    Then pan roast the potatoes once they have dried.
    Prepare the Asparagus
    After the potatoes, parboil the asparagus in boiling salted water for about 3 minutes. Then pan roast the asparagus once it has dried.

    . Serve the lobster thermidor and vegetables as soon as the crumb topping gets coloured.
