Grilled Salmon with Asparagus and Tomato with Lemon Herb Butter

The difference between green and white asparagus is that white asparagus is grown underground. As the spears of white asparagus grow, they’re completely covered with a thick mound of dirt or black plastic so they’re never exposed to the sunlight. White asparagus has a more delicate flavor than green. White asparagus has slightly lower calories than green asparagus.

    Mise en Place
    Keep the fish fillets out 5 minutes before cooking. Score the skin lightly.
    Salmon : let it come up to room temperature by keeping out of the fridge at least 15 mintues before cooking. Lightly score the skin before cooking i.e. make light cuts along the skin.

    Prepare the ingredients as follows:
    Asparagus; wash, dry
    Potatoes: cut them in quarters
    Tomato; wash, dry, trim off ends and split in half
    Thyme: Wash & Dry.
    Boil the Potatoes
    Place the potatoes in cold salted water, make sure there is at least 1 cm of water above the tops of the potatoes. Bring the water to a boil and boil for 10 minutes or until the potatoes are tender enough to pierce with a knife.
    Grill Salmon, Asparagus, Potatoes & Tomato
    Heat some oil in a pan and lightly season your salmon and vegetables before grilling them.

    Then start grilling in the following order:
    Salmon : medium heat, skin side down for about 10 minutes or until it is cooked through. Then let it rest for before serving. This should give you time to grill your vegetables.
    Then asparagus: 3-5 minutes or until they are tender enough for your liking
    Then grill the potatoes for 3-5 minutes or until they have a nice golden crust outside
    Finally grill the tomatoes in the same pan.
    Grill Salmon
    Heat some oil in your frying pan. Season the fillets with; salt, pepper and some thyme just before cooking.
    On a medium heat, start pan frying the salmon fillets skin side down with the thyme. Cook for roughly 5 minutes each side. After you’ve flipped over them once, squeeze a little lemon juice on them. Continue cooking until they’re ready.

    Just before serving put some lemon-herb butter on top of the fish while it’s still warm.
