Miso Cod With Stir Fried Greens

Miso is a traditional Japanese delicacy which is fermented soy beans. Miso provides the gut with beneficial bacteria that help us to stay healthy; good gut health is known to be linked to our overall mental and physical wellness.

    Mise en Place
    Prepare the ingredients as follows:

    Cod: Keep out at room temperature for around 15 minutes before cooking
    Pak Choi: Chop the leaves in medium sized pieces.
    Jasmine Rice: Wash out the rice just before steaming.
    Steam The Rice
    Steam the rice first. Fill water into a pot or saucepan, roughly 2ml of water to 1g of rice. Put the rice in the water and bring it to a gentle boil. Lightly season with salt, cover and allow the rice to steam for 15 minutes or until it is done.
    While the rice is steaming, carry on with the rest of dish in order to save time.
    Steam the Broccoli
    Bring some water to a boil, season with salt and the steam the broccoli for around 3-5 minutes. Once the broccoli is cooked to your liking, drain out the water and keep it aside.
    Sear the Cod
    Heat some oil in a pan. Lightly season the cod and once the oil is hot enough, start searing the cod. Let it colour on both sides (should take 2 minutes a side). The lower the heat and spread some miso paste on one side of the cod. Flip it over so the miso side is down and spread miso on the other side. Allow it to cook for 3 minutes on each side or until is cooked through.
    Sear the Pak Choi
    Once the cod is cooked, put aside and in the same pan sear the pak choi on a high heat. You may need to add a little more oil before searing the pak choi. Be careful, pak choi does not require more than a minute to cook.
    Once you are done, assemble as shown in the picture with the rice at the bottom, fish followed by the vegetables, the chili oil drizzled and the sesame seeds sprinkled on top.
