Mise en Place
Wash and dry the rocket leaves. Take the prawns out of the fridge, 15 minutes before you intend to cook them.
Boil the pasta
Start boiling some water. You will need approximately 4 litres of water from every 200g of dry pasta. When the water comes to a rolling boil, add some salt and then add the pasta. It should cook in 8-10 minutes. Keep an eye on it.
Grill the Prawns
Season the prawns lightly. Heat a little oil in a pan, once it’s hot enough start frying the prawns. After roughly 3 minutes, add the herb butter. Flip the prawns over and cook for another 3 minutes.
Plate up !
Once the pasta is ready, take out of the water and directly put into the pan with the prawns and butter. Check for season, season if required and toss the prawns. Take off the heat immediately.
Dress the rocket leaves with the balsamic dressing, olive oil season if required. Sprinkle some parmesan and serve on a side plate.
