: Prepare the Ingredients
Get the chicken out of the fridge 15 minutes before cooking. Cut into small cubes or dices. Marinate with the Mexican spice mix, some soya sauce, salt and a little cooking oil.
Wash and dry the vegetables prior to chopping (as required):
- Spring onion : chop
- Tomato : cut into small dices
- Bell pepper : remove the seeds and cut into small cubes.
- Onion : chop as fine as you can
- Garlic: peel and mince
- Radish : slice as finely as possible
- Jalapeno : slice as finely as you can. Remove the seeds if you don't like heat.
- Lime: cut into wedges
- Coriander: roughly chop

: Make the Chicken Topping
Heat your pan. Once it's hot add a little cooking oil to lightly coat the pan. Then carefully place the chicken cubes on the pan. Once they're 70% cooked, add the peeled tomatoes. Cook until the chicken is almost completely cooked, then add the green bell peppers. Once the chicken is cooked, turn off the heat and top it off with the spring onions.
: Build the Taco, Plate and Serve
Warm the tortillas on a pan. Start with the tortilla at the base. Spread some salsa roja on top. Top with chicken and then a little diced tomato, onion and coriander. Garnish with the slices of radish, jalapeno and a lime wedge on the side.
