: Prepare the Ingredients
Get the prawns out of the fridge 15 minutes before cooking. Marinate them with the Mexican spice mix, salt and a touch of cooking oil (around 1 tbsp per person).
Wash and dry the vegetables prior to chopping (as required):
- Cabbage: shred as finely as you can
- Garlic: peel and mince
- Coriander: roughly chop
- Radish: slice as thinly as you can
- Lime: grate the zest, cut in half and juice.

Dressing:
***TIP*** Make the dressing 24 hours ahead BUT add salt just before serving.
In a mixing bowl combine; garlic, lime zest, some lime juice, coriander, salt, pepper and the sour cream in a bowl. Mix well. Let it stand for 10 minutes before using it. Mix the cabbage with half the dressing before serving. Keep the other half to spoon over the prawns.
Pan Fry the Pans:
Heat your pan. Once it's hot add a little cooking oil to lightly coat the pan. Then carefully place the prawns on the pan. Once they're 70% cooked, flip them over. As soon as they are cooked, set them aside.

Warm the tortillas on the pan. Start with the tortilla at the base. Put some cabbage on top. Top with prawns and then a little dressing to top it off. Garnish with the slices of radish.
