South Indian Prawn Curry

Curry trees are mostly grown in India and Sri Lanka. Name "curry" refers to strong scent that leaves emit, which slightly resembles the smell of curry powder. Curry leaves have high content of anti-oxidants and contain several vitamins which makes them super healthy for consumption.

    : Prepare the Ingredients
    Prawns: marinate them for about 5 to 10 minutes in the Indian spice mix provided and some salt.

    Wash and dry the vegetables prior to chopping (as required):
    - Green French Beans: take out the woody ends
    - Coriander: chop finely
    - Curry Leaves: just wash and dry.
    : Boil the Rice
    To boil the rice you will need 2ml of water for every 1g of rice, so:
    Rice (g) : Water (ml) | 50g : 100ml | 100g : 200ml | 150g : 300ml | 200g : 400ml | 250g : 500ml | 300g: 600ml |

    Put the rice into a pot with water. Bring it to a boil, then down to a simmer. Allow it simmer gently for 15 minutes, keep an eye on the rice. Once the rice is done, turn off the heat and let it steam with its own heat for 5 minutes before serving. Lightly fluff it with a fork if you would like to, prior to serving.
    : Pan Grill, Plate and Serve
    Prawns:
    Heat a pan and then add some cooking oil. Remember, hot pan and cold oil. Then pan fry the prawns for about 2 minutes or until you the colour go slightly opaque.
    Add the curry leaves and sauté for a minute. Now add the South Indian sauce provided, add some water to get the desired consistency. Let the prawns simmer for about 5 minutes. Check and adjust the seasoning. Garnish with chopped coriander leaves.

    Green French Beans:
    Heat a pan and then add some oil. Sauté the green french beans for about 3 minutes or until they are tender. Season them.

    Plate and Serve:
    Plate the rice and prawn curry and serve with the green beans on the side.
