Fish Tikka Wrap With Mint Chutney

The word "Tortilla" comes from a Spanish word "Torta" meaning round cake.Traditionally Tortillas are made by curing the maize in limewater in the nixtamalization process, which cause the skin of corn kernels to peel off. Then grinding, cooking and kneading it into dough. follwed by rolling them into thin round patties and cooking them on a very hot, flat terra cotta griddle.

    : Prepare the Ingredients
    Fish fillets: marinate in the tikka marinade provided for 15-20 minutes.

    Wash and dry the vegetables prior to chopping (as required):
    - Tomato: slice
    - Cucumber: peel (if you want) and slice into strips
    - Onion: peel and slice
    - Mixed Salad Leaves: just wash and dry
    - Coriander: chop.
    : Pan Fry the Fish
    Warm a frying pan (or a skillet if you have one) on medium heat. Add some oil to the pan, let it warm up.
    Then starting frying your fish. Remember the heat should be medium and you should hear a gentle sizzle.
    Cook the fish until both sides are golden brown and flip as required.
    Once it's done, take it off the pan and let it rest for a couple of minutes then slice it in long strips.
    : Wrap It Up, Plate and Serve
    Gently warm the tortilla on a dry pan or in the microwave.
    Building the wrap:
    1. Place tortilla flat and spread some mint chutney
    2. Place mixed salad leaves
    3. Place the fish
    4. Next come the vegetables - onion, tomato, cucumber and coriander
    5. Roll the wrap.

    Plate and Serve:
    If you want, you can toast the wrap, just be careful because you might end up cooking the fresh vegetables inside the wrap. Plate and Serve.
