Meatball Sandwich with a Side Salad

    Your Pantry Essentials
    Utensils: a sauce pan | a grill|
    Pantry: salt and pepper | your preferred cooking oil | olive oil |
    Prepare your Ingredients
    Preheat your oven to 200°C.

    Mixed Salad Leaves: wash and dry
    Flat Leaf Parsley, Oregano: wash, dry and chop finely
    Thyme: wash, slide the leaves off the stem and them chop.

    Stuff the Meatballs: flatten a meatball in your palm, place some grated mozzarella in the center and roll it into a ball again. Repeat for all the meatballs. Save some mozzarella to sprinkle on top of the sandwich.
    Make the Meatballs in Sauce
    Start by heating some oil in a saucepan. Once it gets hot enough, add the meatballs and brown them. Once they have a nice brown colour to them, add around 2 tablespoons of water to loosen up the caramelised bit at the bottom of the pan. Then add the tomato and herb sauce provided. Mix well and let it simmer for around 15 minutes or until the meatballs are cooked. Check the seasoning.
    Prepare the Sandwich and Serve
    As soon as the meatballs are ready, start filling the sandwich. Split the baguette in half and carefully spoon in the meatballs and the sauce. Sprinkle mozzarella over the sandwich and grill in the oven for around 5 minutes.

    Salad: combine mixed salad leaves, olive oil, salt and pepper. Toss well.

    Once the sandwich is ready, sprinkle the herbs (parsley, thyme, oregano) on top and serve with the salad.
