    : Prepare the Ingredients
    Take the Beef out of the fridge. Cut into thin strips and leave it out of the fridge for at least 15 minutes before cooking.

    Wash and dry the vegetables prior to chopping (as required):
    - Green Bell Pepper: cut into juliennes i.e. thin strips
    - Button Mushrooms: slice them thin ½ cm thick at most
    - Tomato: chop it into small dices
    - Red Onion: peel, and chop a third of the onion fine and the rest slice fine
    - Coriander: chop
    - Garlic: peel and mince.
    : Prepare the Fajita Filling
    Heat some oil in a pan. Once the pan is hot enough, start sautéing the sliced onions and mushrooms. Once the onions are translucent, sauté the beef strips and add half (reserve half the spices for the salsa) of each of the spices (smoked paprika, cumin powder, dried oregano) . Then add the green peppers towards the end of the cooking process so that they remain fresh and crunchy. Check the seasoning.
    : Make the Salsa, Plate and Serve
    In a mixing bowl combine; the peeled tomatoes, diced tomatoes, diced onions, garlic, remaining of the spices (smoked paprika, cumin powder, dried oregano), coriander, olive oil and some seasoning. You may need to crush the peeled tomatoes slightly with a fork or spoon.

    Plate and Serve:
    To serve; spread the tortilla, spoon some the filling on it, sprinkle the cheese and roll the fajita as per your liking. You can grill the fajita if you want.
    Serve the fajita with the salsa.
