    Mise en Place
    Prior to Cooking : Take the Beef out of the Fridge. Cut into thin strips and leave it out of the fridge for at least 15 minutes before cooking.

    Prepare the vegetables as follows:
    Green Bell Pepper: cut into juliennes i.e. thin strips
    Button Mushrooms: slice them thin ½ cm thick at most
    Tomato: chop it into small dices
    Red Onion: peel the onion a third of the onion chop fine and the rest slice fine
    Coriander: wash, dry and chop
    Garlic: mince.
    Grill the Beef and Vegetables
    Heat some oil in a pan. Once the pan is hot enough, start sautéing the onion slices and mushrooms. Once the onions are translucent, sauté the beef and add the spices (reserve half the spices for the salsa). Then add the green peppers towards the end of the cooking process so that they remain fresh and crunchy.
    Make the Salsa
    Mix the peeled tomatoes, fresh tomatoes, diced onions, garlic, remaining spices, coriander, olive oil and some seasoning. You may need to crush the peeled tomatoes slightly with a fork or spoon.

    Once the fajita filling is done, you are ready to serve. Sprinkle the cheese on the fajita filling or serve the cheese separately.
