Beef Burritos

The burrito comes from the Spanish word for “little donkey” (the diminutive of burro). It is the the traditional food of Juarez in Northern Mexico. The traditional burrioa typically consists of one or two fillings and is thin. In the USA however, burritos are made with more fillings and are thicker than their Mexican counterparts.

    Take the ground Beef out of Fridge
    Ground Beef; keep out of the fridge for at least 15 minutes before cooking.
    Mise en Place
    Prepare the vegetables as follows:

    White Onion; peel and dice in to small pieces
    Garlic; peel and mince
    Coriander; wash, dry and rough chop
    Lettuce, Iceberg; Wash, dry and rough chop
    Cherry Tomatoes; Wash, dry and cut into half.
    Prepare the Beef filling
    Heat a pot on medium heat and then add 1tbsp of olive oil. Sauté the onions and garlic for around 5 minutes. Then turn up the heat and brown the ground beef. Break up any lumps that form. Stir in the paprika, cumin, tomato paste. Cook for another 3 minutes before adding the tomato purée, stock and kidney beans. Bring to a simmer and let it cook for around 20 minutes. As soon as the mixture has cooked, check for seasoning. Take off the heat before adding the chopped coriander.
    Build your Burritos
    Build your burritos on the tortillas with the cheese at the base. Serve with a lightly seasoned salad of lettuce, cherry tomatoes and sour cream on the side.
