Beef Burritos

The burrito comes from the Spanish word for “little donkey” (the diminutive of burro). It is the the traditional food of Juarez in Northern Mexico. The traditional burrioa typically consists of one or two fillings and is thin. In the USA however, burritos are made with more fillings and are thicker than their Mexican counterparts.

    : Prepare the Ingredients
    Ground Beef: keep out of the fridge for at least 15 minutes before cooking to bring it room temperature.

    Wash and dry the vegetables prior to chopping (as required):
    - White Onion: peel and dice in to small pieces
    - Garlic: peel and mince
    - Coriander: chop roughly
    - Iceberg Lettuce: chop roughly
    - Cherry Tomatoes: cut into halves.
    : Prepare the Beef Filling
    Heat a pot on medium heat and then add 1tbsp of olive oil. Add and sauté the onions and garlic for around 5 minutes. Then turn up the heat and brown the ground beef. Break up any lumps that form. Stir in the paprika powder, cumin powder and tomato paste. Cook for another 3 minutes before adding the peeled tomatoes, beef stock and red kidney beans. Bring to a simmer and let it cook for around 20 minutes. As soon as the mixture has cooked, check and adjust the seasoning. Take off the heat before adding the chopped coriander. Mix well.
    : Finish, Plate and Serve
    Combine iceburg lettuce, cherry tomatoes, extra virgin olive oil, salt and pepper. Mix well.

    Spread the tortillas. Start with the cheese at the base followed by beef filling. Roll it tight.

    Plate and Serve:
    Plate the burritos and serve with the salad and sour cream on the side.
