    Take the Chicken out of the Fridge
    Keep the chicken out of the fridge 15 minutes before cooking.
    Mise en Place
    Prepare the vegetables as follows:

    Potatoes, Russet; wash, peel and cut into small dices
    Baby Spinach; wash and dry
    Parsley, Flat Leaf; rough chop.
    Pan fry the Chicken
    Season chicken with salt and pepper just before cooking.

    Heat some oil in a sauce pan, add some butter and set the heat to medium. Once the butter starts to foam gently, place chicken on the pan. Let it cook for 8 minutes until it turns golden brown. Then flip it over and cook for a further 8 minutes. Take it off the heat and let it rest.
    The Potatoes
    Put the potatoes to boil. Put them in a pot with enough water to cover them and the add 1 tsp. of salt. Let them boil for around 10-15 minutes or until they’re tender. Then drain out the water, keep the potatoes aside.
    Finish the sides
    Heat some olive oil in a frying pan, set the heat to medium. Once the pan is hot enough, add the potatoes. Let them colour on one side and then toss them to colour another side. Once they have a nice crust on one or two sides, take them off the pan.

    Add a touch more cooking and sauté the spinach about 30 seconds to a minute. Toss in the rest of the butter. Check for seasoning and season if required.

    Just before serving, sprinkle the parsley over the chicken.
