    : Prepare the Ingredients
    Chicken: Keep the chicken out of the fridge 15 minutes before cooking to bring it to room temperature.

    Wash and dry the vegetables prior to chopping (as required):
    - Potatoes: peel and cut into small cubes
    - Spinach: chop roughly
    - Flat Leaf Parsley: chop roughly.

    Pan fry the Chicken:
    Season chicken with salt and pepper just before cooking.
    Heat some oil in a pan, add some butter and set the heat to medium. Once the butter starts to foam gently, place chicken in the pan. Let it cook for 8 minutes until it turns golden brown. Then flip it over and cook for a further 8 minutes. Take it off the heat and let it rest.

    Boil the Potatoes:
    Put the potatoes in a pot with enough water to cover them and the add 1 tsp. of salt. Let them boil for around 10-15 minutes or until they’re tender. Then drain out the water and keep them aside.
    Heat some olive oil in a frying pan, set the heat to medium. Once the pan is hot enough, add the potatoes. Let them colour on one side and then toss them to colour another side. Once they have a nice crust on one or two sides, take them off the pan.

    In the same pan, sauté the spinach about 30 seconds to a minute. Toss in the rest of the butter. Check for seasoning and adjust if required.
    : Finish, Plate and Serve
    Plate the chicken. Pour the lemon and caper sauce provided over it (you can serve the sauce at the side also if you want). Garnish with Parsley and serve with the potatoes and spinach.
