Chicken Stroganov with Fettuccine

    : Prepare the Ingredients
    Chicken: leave it out of the fridge 15 minutes before cooking to allow it to come to room temperature. Cut it into finger like pieces or thick juliennes.

    Wash and dry the vegetables prior to chopping (as required):
    Button Mushrooms: cut into thick slices
    Red Bell Peppers: cut into medium sized cubes
    White Onion: peel and dice finely
    Garlic: peel and mince
    Gherkin: slice it
    Oregano & Sage: chop finely.
    : Prepare the Stroganov Sauce and Simmer
    Heat some olive oil in a pan. Add onions, garlic, sautee for few minutes. Add tomato paste. Sweat these out on a gentle heat. Then add the chicken, let is sauté for about 3-5 minutes to colour it lightly. Then toss in the bell peppers and mushrooms, allow it cook for another 5 minutes.

    Add the chicken stock provided and mix well. Add in the chopped herbs then bring the mixture to a boil and then a gentle simmer. Allow it cook for a further 15 minutes. Check the seasoning. Add grain mustard, mix. Finish the stroganov with the sour cream and sliced gherkins.
    : Boil the Pasta, Plate and Serve
    Bring some water to a boil in a pot (2ml to 1g of pasta). Once the water comes to a boil add some salt, mix well. Then put the pasta into boil. It should take roughly 8 minutes. Once the pasta is cooked to your liking, drain out the water.

    Plate and Serve:
    Plate Chicken Stroganov with Fettuccine and enjoy hot.
