Mediterranean Style Chicken Salad & Pita

There are two varieties of parsley - curly and flat leaf. As the name suggests, the look of the two varieties are the distinguishing factor. Just one tablespoon of parsley sprinkled over your meal contains 9 percent of the daily value for vitamin C, 7 percent of your vitamin A and 82 percent of your vitamin K.

    Bring meat to room temperature
    Allow the meat to sit at room temperature for around 15-20 minutes prior to cooking. This helps the meat to cook evenly.
    Wash Vegetables
    Wash your fresh herbs and leafy vegetables. The other vegetables are sanitized prior to delivery.
    Cut Vegetables
    Cut your vegetables as follows:

    Romaine lettuce; split into individual leaves, tear the larger leaves into smaller pieces if you think you need to.
    Cherry Tomatoes; cut them in half
    Cucumbers; cut in half lengthwise. Scoop out the seeds if you would like to. The cut the cucumber into juliennes.
    Spring Onions; julienne fine
    Black Pitted Olives; drain out the brine
    Parsley; roughly chop.
    Garlic; mince as finely as you can.
    Lemon; use a hand grater and remove some of the zest. Split the lemon in half and juice it.
    Make Yoghurt Dressing
    Make the yoghurt dressing by combing; the yoghurt, lemon zest, juice, the sumac, the garlic and some seasoning (salt and pepper).
    Pan Grill the Chicken
    Heat some oil in a pan. Once the pan is hot enough, place the chicken in the pan to start cooking. Roughly 8 minutes a side. Once the chicken is cooked, take it off the pan and set aside to cool slightly.
    Make the Salad and Serve
    Combine all your salad ingredients except the dressing in a salad bowl. Warm your pita bread if you’d like. Ideally bring the salad, dressing and pita bread to the table separately and let everyone add as much or as little dressing as they’d like.
