Mediterranean Style Chicken Salad & Pita

There are two varieties of parsley - curly and flat leaf. As the name suggests, the look of the two varieties are the distinguishing factor. Just one tablespoon of parsley sprinkled over your meal contains 9 percent of the daily value for vitamin C, 7 percent of your vitamin A and 82 percent of your vitamin K.

    : Prepare the Ingredients
    Allow the chicken to sit at room temperature for around 15-20 minutes prior to cooking. This helps the meat to cook evenly.

    Wash and dry the vegetables prior to chopping (as required):
    - Romaine lettuce: split into individual leaves, then tear into smaller pieces
    - Cherry Tomatoes: cut them in half
    - Cucumbers: cut in half lengthwise. Dessed and cut into juliennes.
    - Spring Onions: julienne finely | Flat Leave Parsley: roughly chop
    - Garlic: mince as finely | Black Olives: drain out the brine
    - Lemon: grater off some zest. Split the lemon in half and juice it
    - Flat Leaf Parsley: chop finely.
    : Pan Grill the Chicken
    Heat some oil in a pan. Once the pan is hot enough, place the chicken in the pan to start cooking. Roughly 8 minutes a side. Once the chicken is cooked, take it off the pan and set aside to cool slightly. Slice.
    : Prepare the Salad, Plate and Serve
    Yoghurt Dressing:
    In a bowl combine; the yoghurt, lemon zest, lemon juice (as per your taste), sumac, the garlic, salt and pepper. Mix well.

    In a bowl combine all the salad vegetables (cucumbers, cherry tomatoes, romaine lettuce, spring onions, parsley and black olives).

    Plate and Serve:
    Warm the pita bread.
    Ideally bring the chicken, salad, dressing and pita bread separately to the table and let everyone mix their own salad with as much or as little dressing as they’d like.
